Cod, chorizo and lentils

A super simple dish that has become one of my favourites! Healthy and nutritious, I’ve used orzo in it before, but replacing with lentils will make it even more filling.

  • 475g fish fillets (we’ve used frozen cod, haddock and pollock)
  • 190g cooking chorizo
  • 250g whole lentils
  • 1 onion
  • 1 tin tomatoes
  • Garlic
  • Lemon
  • Basil

If you’re using frozen fish, cook the fillets in the oven with a bit of butter, a pinch of salt and a good crack of pepper.

Slice the onion and herbs.

Heat a drop of olive oil in a frying pan and fry the chorizo for a few minutes until they get slightly crispy.

Add the washed lentils and garlic, mix well in the oil.

Add the onions and stir until softened. Add the tomatoes and nestle the fish fillets into the mix.

Season well, cover and cook for twelve minutes or until lentils are cooked.

Add the basil and squeeze lemon juice over.
