One Pan Sausage & Lentils

I love eating, I love bossing Mr. Fox around when he’s cooking, I like chopping things and I even like washing up (occasionally).

However, Mr Fox is super grumpy when I wash up and splash water everywhere so we’ve mastered the art of cooking in one pan.

Everything goes in, cook, serve and just a couple of things to clean. Make it super nutritious and that’s the perfect meal.

Here’s a quick mid week lentils, veg and sausage dish, takes about 40min, smells divine:

Two packs of sausages (Asda ExtraSpecial range are surprisingly tasty!)
250g washed lentils (whole)
Frozen veggies of your choice. I’ve been using micropacks of broccoli, greens and sweet potato and grains, bulgar wheat and couscous.
Olive oil to fry
300ml stock (or if you’re like me and forgot to buy, Worcester Sauce is a good trick)

Heat oil at a highish heat and fry the sausages till they are browned on all sides, typically 8 – 10 minutes.

Add the lentils and toast for 1 minute. Keep stirring to ensure lentils coated in oil and don’t stick.

Deglaze(*) the pan with a drop of stock or worcester sauce

Add stock, cover and cook for 15 minutes.

Add veggies, stir and cover. Cook until veggies cooked through.

Serve and enjoy!

(*) Deglazing – when you fry stuff, especially meat, the caramelised, crusty bits have lots and lots of flavour. Simply pour a liquid in – stock, worcester sauce, or even a drop of water to steam it off and get all that flavour into your dish.
