
Veg cooking ideas
We all need some inspiration for our food, especially as we want to #EATMOREVEGGIES every day
It’s all about spices and combos, here’re some recipes I’ve saved up as veg ideas. And of course the trusted spiralizer saves a lot of hassle, 30sec and a fresh spicy cucumber salad is done.
Recently, Mr Fox seems to have developed an allergy to all things spiralized or substituted, only TRADITIONALLY CHOPPED things will do. As you know I’m not an #EatClean follower, by the way, in case you haven’t seen the FB post, here’s a great read on the whole clean eating thing, however, the spiralizer did help me personally to get more veg onto the table. And frankly I do not care what these long ribbons of courgettes and other veg are called – they are tasty with a bit of garlic and mix of peppers. And I really do not mind who has come up with the recipe, as long as it has normal every day ingredients and suits my diet – I’ll try it.

No 1 cavolo nero – can use spring greens or kale instead, No 2, 3, 4 – can live very nicely on top of bag of mixed salad leaves or mixed with cooked spring greens.
